#DisneyMagicMoments: Cooking Up the Magic – Enjoy the Impossible™ Burger Slider at Home or at Taste of EPCOT International Food & Wine Festival through Nov. 22

If you haven’t visited Taste of EPCOT International Food & Wine Festival yet, or if you need to go back for seconds (or thirds!) you have just over a month to sip and savor. The festival will close on Nov. 22 to make way for Taste of EPCOT International Festival of the Holidays presented by AdventHealth, which begins Nov. 27.

I asked our Festival chefs to share one of my favorite plant-based recipes – the Impossible™ Burger Slider with Wasabi Cream and Spicy Asian Slaw. This slider, with its perfect spicy kick, is a popular festival offering as well as an easy (and delicious!) recipe to make at home. Check out the how-to video that accompanies this recipe.

Impossible™ Burger Sliderwith Wasabi Cream and Spicy Asian Slaw

Impossible™ Burger Slider with Wasabi Cream and Spicy Asian Slaw  Makes 6 Sliders

SLAW DRESSING

  • 1/4 cup sambal
  • 1 1/2 tablespoons low sodium soy sauce
  • 1/4 cup granulated sugar
  • 1 teaspoon fresh minced ginger
  • 1/2 teaspoon minced garlic
  • 1 teaspoons sesame oil 
  • 2 tablespoons fresh lime juice

SWEET AND SPICY SLAW

  • 1 cup shredded green cabbage
  • 1/2 cup shredded carrot
  • 1/2 poblano pepper, thinly sliced
  • 1/2 cup shredded green papaya
  • 2 tablespoons chopped cilantro
  • Reserved slaw dressing
  • Salt and pepper, to taste

WASABI AÏOLI 

  • 1 tablespoon water
  • 1 tablespoon wasabi powder
  • 1/2 cup plant-based mayonnaise
  • 1/2 teaspoon coarse salt

IMPOSSIBLE™ PATTIES

  • 18 ounces Impossible™ Burger
  • 2 teaspoons coarse salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons sambal 
  • 1 tablespoon canola oil

SLIDERS

  • 6 slider rolls with sesame seeds
  • 1 cup baby arugula

FOR SLAW DRESSING:

  1. Place sambal, soy sauce, sugar, ginger, garlic, and sesame oil in small saucepan. Heat over medium-high heat until boiling and stir until sugar is fully dissolved. Remove from heat and cool to room temperature. 
  2. Stir in lime juice and refrigerate until ready to serve.  

FOR SWEET AND SPICY SLAW:

  1. Combine cabbage, carrot, sliced pepper, green papaya, and cilantro in large bowl. 
  2. Add cooled slaw dressing. Season with salt and pepper, to taste. 

FOR WASABI AÏOLI:

  1. Mix water and wasabi powder in medium to form a paste. 
  2. Whisk in plant-based mayonnaise and salt until combined. 
  3. Refrigerate until ready to serve. 

FOR IMPOSSIBLE™ PATTIES:

  1. Combine Impossible™ Burger, salt, pepper, and sambal in large mixing bowl. Divide into six 3-ounce patties and shape to size of slider buns. 
  2. Heat canola oil in large skillet over medium heat for 5 minutes. Place patties in pan and cook for 3 minutes on each side, until 155°F. 
  3. Keep warm.

TO SERVE:

Drizzle Wasabi Aïoli on the bottom half of each sesame bun and top with a few leaves of baby arugula. Top with Impossible™ patty and Sweet and Spicy Slaw before adding the top of each bun.  

Cook’s Notes: Impossible™ is available online or at your local grocery store. Impossible™ cooks and tastes like beef made from cows – but is made sustainably, from plants. 

Always use caution when handling sharp objects and hot contents. Please supervise children who are helping or nearby. This recipe has been converted from a larger quantity in the restaurant kitchens. The flavor profile may vary from the restaurant’s version.

La Cava del Tequila Honors Día de los Muertos with an Ofrenda

Halloween may be the more commonly known holiday here in the United States, but Día de los Muertos is celebrated throughout Mexico. If you are not familiar with the celebration you can gain some familiarity at the Mexico Pavilion at EPCOT. There you can view a tradition that is very important to the celebration. La Cava del Tequila honors Día de los Muertos with an ofrenda guests can view.

An ofrenda translates to “offering” in Spanish. This special tradition consists of setting up an altar with offerings, mementos, and photos of loved ones, family members, or prominent people who have died. Staples of the celebration are often placed at the ofrenda, such a pan de muerto, a traditional sugary pastry adorned with bone and skull shapes, and marigold petals.

The ofrenda on display at La Cava del Tequila is set up at a booth since there is no seating allowed at the venue as a COVID-19 precaution. Guests coming in to order a drink to go from La Cava del Tequila can view this beautiful and detailed ofrenda, and learn more about this tradition.

#HispanicHeritageMonth: Cast Members Celebrate Culture From All Across the Country

During
the past four weeks, we recognized #HispanicHeritageMonth by bringing you
stories as we celebrated the cultures and contributions of Latinx individuals
both inside and outside of our company – from Disney chefs who bring their
cultura and sabor to their work to Badia
Spices
, one of our
Hispanic-owned diverse suppliers. All the while, we’ve also hosted a series of special
events for our cast members. Today, we’re excited to share a glimpse into those
events with all of you.

Our employee resource groups joined together from all over the country to host digital events all month long – from Walt Disney World to our Glendale and Burbank offices to ESPN. Our cast members have been excited to participate in these special offerings, including a “Latinas in Leadership – Embracing Authenticity and Brining Value” panel and an “Afrolatinidad: The Voices between Black and Brown” panel. An important element at the heart of each of these events was culture. We pride ourselves on fostering a culture where our cast members feel a sense of belonging. We believe inclusion is a critical part of our culture because it helps us tell the best stories, be relevant and expand our audiences.

As we close out the month, we wanted to share one last performance from Mariachi Cobre, the legendary musical group from Walt Disney World whose story we shared earlier this month. Take a listen below:

Make Halloween Magical with Disney Resort Gift Baskets

Halloween sure feels different this year. If you’re staying at Walt Disney World for Halloween or are in the local area, Disney has a way to add some pixie dust to this spooky time of year. At Disney’s Contemporary we spotted some Disney Halloween baskets.

During big holidays like Halloween, Christmas, and Valentine’s Day you can usually pick up special gift baskets at the merchandise shop of most Disney Deluxe Resort Hotels. During Valentine’s Day we spotted gift baskets for purchase at Disney’s Boardwalk Resort. Now, for Halloween we’ve found gift baskets at Fantasia Gifts, located on the concourse level of Disney’s Contemporary Resort. You can also build your own basket!

These gift baskets usually have a collection of items found in the merchandise shop itself, like candy and small plush dolls. These items are put together with care and creativity to become a holiday gift basket. If you want something more personalized, you make your own customized basket! This is a great way to make a thoughtful gift.

Pricing varies, usually in the $45 – $75 range depending on contents. If you’re interested in a Disney gift basket for Halloween or any other major holiday, please speak with a Merchandise Cast Member at Fantasia Gifts at Disney’s Contemporary Resort. Usually the other merchandise shops at the other Deluxe Disney Resorts offer gift baskets too.

Disney Cruise Line Early 2022 Itineraries Are Here!

It’s great to share some good news for a change – the early 2022 DCL itineraries have been announced today!

The Disney Magic will make her home out of Miami to start the year. She will sail a standard variety of 3-, 4-, and 5-night Bahamian and Caribbean itineraries. This would also be the time we’d see select sailings designated as Marvel Day at Sea sailings, though this won’t be announced until down the road.

The Wonder will start the year in Galveston, with Bahamian and Caribbean sailings. On March 4, 2022 she will make that coveted Westbound Panama Canal journey, and end up in San Diego for Baja and Pacific Coast cruises. Then it will be time to pack the lei and hula skirt, as she will finally make that long awaited return to Hawaii! This is super exciting after missing out on these two great sailings in 2020. I expect these two 10-night sailings between Honolulu and Vancouver will be very popular once again!

Disney Cruise Line Early 2022 Itineraries Are Here!

The Dream will continue her 3- and 4-night sailings to the Bahamas from Port Canaveral, as we always expect her to do.

The Disney Fantasy will sail her usual 7-night Eastern and Western Caribbean cruises. Many of these in January and February will likely be Star Wars Day at Sea sailings.

You can check out the full list of dates and itineraries here.

There’s not much time to think on the options this time, because booking will start next week! Booking will be as follows:

  • Monday, October 19 for Platinum Castaway Club Members (guests who have sailed with Disney more than 10 times) and Golden Oak residents.
  • Tuesday, October 20 for Gold Castaway Club Members (guests who have sailed more than 5 times)
  • Wednesday, October 21 for Silver Castaway Club members (guests who have sailed with Disney Cruise Line at least once), Adventures by Disney insiders, and Disney Vacation Club members.
  • Thursday, October 22 for everyone!

You will be able to book online, over the phone, or with your travel agent. If you have a Placeholder from a previous cruise, this can only be done on the phone, or with the travel agent on record.

As a reminder, if you’ve got future cruise credit from a cancelled sailing from this year, you will have through May 31, 2022 to use that! What’s got your eye on this latest round? Let me know in the comments!!
